Mom's Dried Apple Stack Cake

Ingredients:
Cake
* 2/3 cup of butter (soft)
* 1 teaspoon baking soda
* 1 1/3 cups of brown sugar
* 2 eggs well beaten
* 1/4 teaspoon salt
* 1 teaspoon vanilla
* 3 rounding cups of flour
* Powdered sugar for topping
Filling
* 2 cups of water
* 3-4 packages of dried apples
* 1/2 cup of brown sugar
* 2-3 tablespoons of butter
* 1 tablespoon of cinnamon

Directions:
Cake
* Preheat oven to 375 degrees.
* Sift flour with baking soda and salt.
* Cream butter and sugar.  Add beaten eggs and vanilla then sifted flour (dough will be very stiff).
* Divide into 5-6 equal parts.  Grease 8" pans.  Place a piece of dough in the center of each pan and pat; press outward until bottom of pan is covered with a very thin layer.
* Bake until brown (about 10 minutes or so).
* Remove to a cloth and cool.
Filling
* Combine ingredients in a large pot and cook apples until soft.
Assemble
* Spread to top of each layer with a portion of the cooked apple mixture.  Do not put mixture on top cake. 
* Coat the top of the cake with powdered sugar sprinkled on through a sifter.

Let the cake stand for 24 hours to ensure the juices get absorbed into the cake.
