Mini Cheeseburger Puffs

Ingredients:

 

1 pound ground chuck
2 teaspoons steak seasoning
1 teaspoon salt
Freshly ground black pepper
1/2 Vidalia onion, minced
1 package puff pastry sheets
20 (1-inch) slices Cheddar

 

Directions:

Preheat oven to 350 degrees F.

Combine the first 5 ingredients. Hand-form patty to 1/4 normal burger size, about 2-inches in diameter. In a grooved black skillet, cook burgers to medium. Turn once. Do not overcook.

Roll out thawed puff pastry. Cut 10 (6-inch) even panels. Place burger in center of square and top with 2 slices of cheese. Fold edges up and twist on top. Bake 20 to 25 minutes and serve warm.

Green Chile and Frito Burger

Ingredients:

1 pound ground chuck
1 teaspoon kosher salt
1/4 teaspoon pepper
2 teaspoons vegetable oil, divided
2 fresh Hatch or Anaheim chiles (4 oz. total) or 1 can (7 oz.) Hatch* or regular green chiles, sliced
4 slices (4 oz.) pepper jack cheese
2 cups Fritos
3 tablespoons mayonnaise
2 teaspoons chipotle barbecue sauce
4 kaiser rolls, split 

Directions:

Heat grill to medium (350° to 450°). Mix ground chuck, salt, and pepper in a large bowl until just combined (do not overmix). Divide into 4 portions and form into 1/2-in. patties with a slight depression in the center of each to help them cook evenly. Brush with 1 tsp. oil.

Rub fresh chiles with remaining 1 tsp. oil. Grill over high heat, turning often, until blackened, about 4 minutes. Cover with a towel to steam, about 10 minutes. When cool, rub off skins, then stem, seed, and slice chiles into strips.

Grill burgers until cooked the way you like, about 7 minutes for medium. In last few minutes, lay a cheese slice on each burger and lay split rolls on grill.

Arrange burgers on bottom of buns and top with one-quarter of chiles and Fritos. Mix mayonnaise and barbecue sauce and dollop about 2 tsp. onto each burger. Set tops of rolls in place.

Stuffed Bacon Cheeseburgers


Ingredients:

1 1/3 lb ground beef
3 slices bacon, cooked to a crisp and crumbled
1/2 cup shredded double cheddar cheese
Salt
Pepper
Worcestershire
4 hamburger buns (our current favorite)
Fixings of your choice: lettuce, tomato, onion, pickles, mayo

Instructions:

Heat grill to medium-high heat.

Combine cheese and crumbled bacon in a bowl, set aside.

Divide ground beef into 4 equal portions and divide each portion in half.

Form each ball of ground beef into a patty. Top with 2-3 Tbsp cheddar-bacon mixture and a second patty.

Pinch the patties around the edges to seal well and lightly press into a uniform burger patty.

Season with salt, pepper, and a dash of Worcestershire.

Cook on the grill 4-5 minutes each side, until cooked to desired doneness.

Assemble on buns with the fixings of your choice.
